This is wonderfully funky, fleshy, and generous Rhone juice that shows a ton of wild garrigue and dried herbes de Provence on the nose. Made from a blend of Syrah, Grenache, Mourvedre, and Carignan in the Costieres-de-Nimes, which is located in the southernmost part of the Rhone, this is super velvety and lush in the mouth, and drinks like a far pricier wine.
- Orecchiette pasta tossed with fennel sausage and caramelized cauliflower
- Duck confit with polenta
- Lamb chops rubbed with dried lavender and thyme
